Cam covers the 4 staples of BBQ: ribs, chicken, pulled pork, and brisket
Cameron Treu, founder and pitmaster of Bam Bams BBQ, hosted his own BBQ 101 class at Traeger HQ in Salt Lake City, UT. Attendees learned everything to take their barbecue to the next level, whether they were brand new smokers or rookie competition cooks. The class spanned 5 hours and covered the 4 staples of BBQ: ribs, chicken, pulled pork, and brisket. Cam shared a few of his trade secrets and tricks with the lucky audience.
A special guest was in attendance, assisting Cam — Tommy Passemante of Nitro Circus. Tommy, also known as “Street Bike Tommy”, is the class clown of Nitro Circus. He has joined Travis Pastrano, the Ringleader of the Nitro Circus Crew, in hundreds of stunts, dozens of tours, and even a few movies.
Street Bike Tommy was on a quest to become a pit master and reached out to his good friend, Cameron Treu, to become a BBQ apprentice. He spent the entire month of January fine tuning his BBQ skills and learning from the masters at Bam Bams BBQ in Orem, UT. It only seemed fitting that he joined Cam for his BBQ 101 Class at Traeger.

Champion barbecuers love a good smoke ring. Whether you’re smoking a pork butt, ribs, chicken, or brisket, Cam recommends putting the meat on the grill cold for the best smoke ring. Often 1/4” to 1/2”, a smoke ring is a chemical reaction between the smoke and the protein in the meat. This reaction causes a beautiful pink ring around the edge of meats. While smoke flavor penetrates the meat throughout a long cook, the chemical reaction which creates the smoke ring stops once the meat reaches an internal temperature of 130 degrees F.
