We've taken a feather from a Brit's cap on our high-n-mighty, herb encrusted Wellington. It's not just for special occasions, it's heartily flavorful and perfect for meat lovers.

Ingredients

Quantity units            
Ground Beef (80/20)1 1/2 lbs.
Eggs 2
Roasted Red Peppers, diced 1/2 cup
Mushrooms, cooked and chopped 2 cup
Fresh Rosemary, chopped 1 Tbsp
Traeger Beef Rub 1 Tbsp.
Bacon, cooked and diced 1 cup
Pistachios, chopped 1/2 cup
Salt1 tsp.
Pepper 1 tsp.
Milk 2 tsp.
Puff Pastry Dough, frozen 1 sheet

Preparation

In a large mixing bowl, combine all ingredients, except the milk, and the pastry dough. Be careful not to over mix.

When ready to cook, start your Traeger grill on Smoke with the lid open until the fire is established (4 to 5 minutes). Set the temperature to 325°F, close the lid, and pre-heat for 10-15 minutes.

Form the meat mixture into an 8 inch loaf.

Unwrap the pastry and wrap around the meatloaf, folding in the ends and sealing the bottom.

Brush the loaf with milk and place it on the Traeger.

Cook for 30 to 35 minutes. If the pastry starts to get too brown, lightly cover with foil.

When done, remove from Traeger and let rest 10 minutes before slicing. Enjoy!
