Zesty skillet pie is a sure-fire way to a satisfy Sunday morning breakfast cravings, and hangovers. It's ham and cheese quiche with smoke infusions of flavor that's healthy and deliciously simple.

Ingredients

Butter1 Tbsp.
Panko or Fine Dry Breadcrumbs2-3 Tbsp.
Large Eggs, beaten9
Creamed Cottage Cheese2 cups
Monterey Jack, Cheddar, Swiss, or a Combination, shredded3 cups (12 oz.)
All-purpose Flour1/4 cup
Baking Powder1 tsp.
Ham, diced3/4 cup
Black Pepper, freshly ground1 tsp.
Scallions, trimmed, and white and green parts thinly sliced3
Roasted Red and Green Bell Peppersfor garnish

Preparation

Butter a well-seasoned 10-inch cast iron skillet or pie plate. Sprinkle the panko evenly over the buttered surfaces.

In a large mixing bowl, whisk together the eggs, cottage cheese, shredded cheese, flour, baking powder, and pepper. Stir in the onions. Tip into the prepared skillet.

When ready to cook, start the Traeger grill on Smoke with the lid open until the fire is established (4 to 5 minutes). Set the temperature to 350F and preheat, lid closed, for 10 to 15 minutes.

Bake for 45 minutes to an hour, or until the quiche is firm in the center and the top is golden brown. Cut into wedges to serve.
