Hit pot-luck baked beans out of the park with drunken, bacon loaded beans. This savory side is almost a chili but still a spicy side dish. We give you permission to pour the beer on it, don't spill because that's beer abuse.

Ingredients

Bacon1 lbs.
Pre-cooked Sausage Links3 cups
Pinto Beans2 (16-oz.) cans
Red Bell Peppers2
Yellow Onion1
Garlic Powder1/2 tsp.
Onion Powder1 tsp.
Smoked Paprika1 tsp.
Cumin1 tsp.
Black Pepper1/2 tsp.
Chili Powder1 tsp.
Worcestershire Sauce1 Tbsp.
Yellow Mustard1 Tbsp.
Brown Sugar1/4 cup
Dried Smoked Chipotle Pepper1
Apple Juice1 cup
Beer24-oz.

Preparation

When ready to cook, start the Traeger on Smoke with the lid open until the fire is established (4 to 5 minutes). Set the temperature to 450F.

Put in deep dish dutch oven and preheat the grill, lid closed, for 10 to 15 minutes. Chop and add bacon to pre-heated dutch oven. Cook bacon until crispy brown then, drain grease.

Add bell pepper, onion and sausage to the cooked bacon. Cook until onions are translucent. In another bowl add garlic powder, onion powder, smoked paprika, cumin, black pepper, chili powder, Worcestershire sauce, yellow mustard, brown sugar, beer, pinto beans, apple juice and one dried chipotle pepper. Mix together and add to the dutch oven.

Leave on high (uncovered) and bring beans to a simmer. After it starts to simmer, reduce heat to 275 and cook for 2/12 to 3 hours or until sauce is thickened.
