We wait all summer long for it to cool off and be pumpkin season. Bake these plump Walnut Pumpkin Cookies outside and enjoy the crisp fall air.

Ingredients

All-purpose Flour2 cups
Baking Powder1 tsp.
Baking Soda1/2 tsp.
Salt1/2 tsp.
Ground Cinnamon1 tsp.
Ground Nutmeg1/4 tsp.
Pumpkin Pie Spice1/2 tsp.
Butter, softened8 Tbsp.
Granulated Sugar1 cup
Pumpkin Puree1 cup
Egg1
Vanilla Extract 1 tsp.
Walnuts, chopped1 cup
Recommended Hardwood Pellets:Maple

Preparation

When ready to cook, start the Traeger grill on Smoke with the lid open until the fire is established (4 to 5 minutes). Set the temperature to 325F and preheat, lid closed, for 10 to 15 minutes.

Combine flour, baking powder, baking soda, salt, cinnamon, nutmeg, and pumpkin spice, set aside.

In another bowl beat butter. Add sugar, pumpkin puree, egg and vanilla, mix well. Gradually combine flour mixture. Fold in walnuts.

Drop spoonful amounts of dough onto aluminum foil, then place on grill grate. Bake for 18 minutes.
