When ready to cook, start the Traeger grill on Smoke with the lid open until the fire is established (4 to 5 minutes). Set the temperature to 350 degrees F and preheat, lid closed, for 10 minutes.
In a large skillet combine the onion, garlic, and whiskey. Simmer for 20 minutes on the Traeger or until onion is translucent.
Mix in the ground black pepper, salt, ketchup, tomato paste, vinegar, Worcestershire sauce, brown sugar, and hot pepper sauce.
Bring to a boil. Reduce the heat on the Traeger to 225 degrees F, and simmer for 20 more minutes.
Run sauce through a strainer if you prefer a smooth sauce. Use on your favorite BBQ recipes. Enjoy!
