Deep flavor, rich chocolate, this wood-fired cocoa is steeped in Mayan & Aztec tradition.

Ingredients

  • 2/3 cup Cold Heavy Cream
  • 1/2 cup Sugar
  • 1/4 cup Dutch-Processed Cocoa Powdered
  • 1/8 tsp. Salt
  • 4 cups Milk
  • 1 3/4 cup Bittersweet Chocolate, Finely Chopped
  • 1/8 tsp. Ground Smoked Cayenne
  • 1/2 tsp. Ground Cinnamon
  • 1/2 tsp. Smoked Paprika
  • 1/2 tsp. Vanilla
  • 2/3 cup Cold Heavy Cream
  • 1/2 cup Sugar
  • 1/4 cup Dutch-Processed Cocoa Powdered
  • 1/8 tsp. Salt
  • 4 cups Milk
  • 1 3/4 cup Bittersweet Chocolate, Finely Chopped
  • 1/8 tsp. Ground Smoked Cayenne
  • 1/2 tsp. Ground Cinnamon
  • 1/2 tsp. Smoked Paprika
  • 1/2 tsp. Vanilla

Preparation

When ready to cook, start the Traeger grill on Smoke with the lid open until the fire is established (4 to 5 minutes).

Set the temperature to 300 degrees F and preheat, lid closed, for 10 to 15 minutes. Smoke the cayenne peppers for approximately 30 minutes.

Cook the cinnamon and paprika on a pan in the Traeger for 5 minutes set at the Smoke setting.

In a medium saucepan scald the milk, cream and sugar. After a few minutes, whisk in the cocoa, salt and then once its hot stir in the bittersweet chocolate, smoked spices and vanilla.

Whisk until combined and serve with cream or marshmallow. Enjoy!
