Filling: In a medium mixing bowl, use an electric mixer to combine the ricotta cheese, powdered sugar, vanilla extract, grand marnier, salt and lemon zest.
Shells: Combine sugar and cinnamon in a bowl. On a lightly floured surface, roll out a 14 oz refrigerated pie crust dough. Sprinkle the dough evenly with the sugar and cinnamon mixture.
Use a 3-inch cookie or biscuit cutter to cut out as many rounds as you can. Tuck the cutouts into the wells of an ungreased muffin tin.
When ready to cook, set Traeger to Smoke with the lid open (about 4 to 5 minutes). Set the temperature to 400 degrees F and preheat with the lid closed for 10 to 15 minutes.
Put the muffin tin on the grill grate and bake the shells for about 10 minutes. Rotate the pan halfway through to prevent them from cooking unevenly. Once they’re golden brown, remove the pan to a wire rack to cool completely.
Take the filling bag and snip off a corner so you can pipe the filling into each of the shells.
Dust lightly with additional powdered sugar and serve. Enjoy!
