Infuse rich hardwood flavor into your cheese of choice by cold smoking it on the Traeger. Pair with crackers, wine, or pickled vegetables for the perfect snack.

Ingredients

  • Preferred kind of block cheese: Mozzarella, Provolone, Cheddar
  • 1 large disposable roasting pan
  • 1 medium sized disposable roasting pan (that fits in large pan)
  • Ice
  • 4-10 Toothpicks

Preparation

When ready to smoke, start Traeger on Smoke with lid open until fire is established (4-5 minutes) close lid and keep on Smoke setting.

Place smaller roasting pan in center of large pan. Surround small pan with ice filled all the way to the top.

Place cheese in small pan sitting on top of toothpicks so it allows airflow around the cheese and prevents sticking. Place pan on grill.

Smoke cheese for 1 hour. Open grill and flip cheese over. Add more ice around pan into melted water and continue smoking for 1 more hour.

Remove cheese from grill and wrap in parchment paper. Place in fridge and allow to rest for 2 to 3 days. This will allow the smoke flavor to mellow.

After 2 to 3 days, remove from fridge, unwrap, slice and serve with your favorite cracker, pickled vegetables and wine. Enjoy!
