If your favorite camping dessert is dutch oven peach cobbler, try our smoky peach cobbler cupcake recipe. Enjoy wood-fired goodness without toting a dutch oven up a mountain.

Ingredients

  • 1 box moist yellow cake mix
  • 2 large peaches
  • 3/4 cups sugar
  • 2 tsp lemon juice
  • 1/2 tsp cinnamon
  • 1 can white icing

Preparation

Bring pot of water to a boil. Turn peaches upside down and cut a small shallow X across the bottom. Put peaches in boiling water and boil for 1 minute to help loosen the skin.

Drain the peaches into a colander and rinse off with cold water. Peel skin off peaches.

Filling: Dice peaches and place into a large pan. Cook peaches over medium heat. As it starts to sizzle, add sugar, lemon and cinnamon. Cook mixture on medium heat for 10-15 minutes until a majority of the juice from the peaches evaporates leaving a thick syrup.

Transfer to a bowl to cool.

When ready to cook, start the Traeger grill on Smoke with the lid open until the fire is established (4 to 5 minutes). Turn temperature to 350 degrees F and preheat, lid closed, for 10 to 15 minutes.

Cupcakes: Follow the directions on box cake mix and put the mixture into cupcake pan with liners.

When grill has preheated, bake cupcakes for 13-16 minutes, until a light golden brown.

When cupcakes have cooled, use a piping bag to pipe the peach cobbler mixture into the middle of cupcake.

Ice with your favorite vanilla icing. Enjoy!
