When ready to cook, start the Traeger on Smoke until a fire is established (4 to 5 minutes). Increase the temperature to 325 degrees F and allow to pre-heat, lid closed, for 10-15 minutes.

In A medium bowl, whisk together flour, baking soda, baking powder, cocoa powder, and salt. Set aside.

In a large bowl, combine sugar and vegetable oil. Mix in the eggs, buttermilk, vanilla, and red food coloring until combined. Stir in the coffee and vinegar.

Combine the wet ingredients with the dry ingredients, a small amount at a time, mixing after each addition. Mix just until combined.

Generously grease and flour 2 round 9” cake pans with shortening and flour. Pour the batter evenly into each pan.

Place cake pans on grill grate and bake for 30 to 40 minutes, or until a toothpick inserted in center comes out clean.

Allow pans to cool on a cooling rack, until warm to the touch. Remove cakes from pans and allow to completely cool.

Frost cake with cream cheese frosting, doing a layer of frosting between both cakes. Enjoy!
