Crash your mustache into this southwestern meat pie of brisket swathed in enchilada sauce, laid in a bed of green chile massa, and blanketed with mozzarella. It's a mega beef cake.

Ingredients

  • 1 1/2 cup All-Purpose Flour
  • 1/2 cup Yellow Corn Meal
  • 3 Tbsp. Sugar
  • 1 tsp. Baking Powder
  • 1/4 tsp. Salt
  • 2 Tbsp. Vegetable Oil
  • 4 oz. can Green Chiles, Drained
  • 1/4 cup Milk
  • 1 Egg
  • 2-3 cups Leftover Brisket, Roughly Chopped
  • 15 oz.can Enchilada Sauce
  • 1 cup Mozzerella, Shredded
  • 1 Tbsp. Cilantro, Chopped
  • 1 1/2 cup All-Purpose Flour

  • 2-3 cups Leftover Brisket, Roughly Chopped
  • 15 oz.can Enchilada Sauce
  • 1 cup Mozzerella, Shredded
  • 1 Tbsp. Cilantro, Chopped

Preparation

When ready to cook, start your Traeger on Smoke with the lid open until the fire is established (4 to 5 minutes). Set temperature to 375F and pre-heat, lid closed (10-15 minutes).

Stir together brisket and enchilada sauce in a medium bowl, set aside.

Whisk together the cornmeal, flour, salt, baking powder, and sugar. Stir in the oil until it is crumbly then add the milk, egg, and chiles, stirring until combined.

Press the Massa crust mixture into a greased, cast iron skillet or pie plate.

Bake at 375F for 25 minutes, or until golden brown.

Reduce temperature on Traeger to 350F. Poke holes in the crust and add the enchilada filling.

Sprinkle with the cheese and bake 20 minutes, or until heated through and cheese is melted and bubbly. Garnish with cilantro, serve, and enjoy!
