When ready to cook, start your Traeger on Smoke with the lid open until the fire is established (4-5 minutes). Set the temperature to 180F and preheat, lid closed, for 10-15 minutes.
Rub Tri-Tip with Beef Rub and coffee grounds. Place on the grill grate and smoke at 180F for 3 hours.
Remove Tri-Tip and increase the temperature to 275F. Double wrap the Tri-Tip in foil, return it to grill, and let it cook for 45-90 minutes, or until the internal temperature reaches 160F.
Remove from the grill, unwrap foil, and let it rest for 10-15 minutes. Cut and serve. Enjoy!
