Unwrap tomatillo and place into a pot of water; bring to a boil and boil for 3 minutes. Remove from water; reserve water.
Add cilantro, tomatillo, green onion and garlic into a food processor or blender. Add oil, mustard, 1/4 c of reserved cooking water, horseradish and seasonings. Blend ingredients until smooth; set ½ cup of sauce aside for later.
Generously coat steak with remaining sauce; marinade for 1 to 4 hours.
When ready to cook, start the Traeger on Smoke with the lid open until a fire is established (4-5 minutes). Increase temperature to 450 degrees F and preheat, lid closed, for 10 to 15 minutes.
Place steaks on grill and cook for 10 minutes; flip and cook for an additional 5.
Remove from grill and allow to rest for 5 minutes. Thinly slice steak and pile on cut rolls, topping with dressing and a small handful of spring salad mix. Enjoy!
