Sweet smoked crab atop rich filet mignon is the perfect surf & turf platter for celebrating a Birthday, Anniversary, or new job.

Ingredients

Filet Mignon:

  • 12 oz filet mignon (cut in two 6oz pieces)
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1 tsp Jacobsen salt
  • 1 tsp Ground black pepper

Seasonal Crab:

  • 1/2 lb crab meat
  • lemon
  • garlic
  • fresh parsley
  • salt
  • pepper

Filet Mignon:

  • 12 oz filet mignon (cut in two 6oz pieces)

Preparation

Prepare the Traeger Grill by turning it to the Smoke setting for 5-10 minutes. Make sure the drip tray is empty.

Turn the grill up to High, and preheat with the lid closed for 10-15 minutes. Do not open the grill during this period of time.

Chef Tip: Slow smoke ½ lb crab meat over cherry wood. Remove the crab from shells and toss in a bowl with lemon, chopped garlic, fresh parsley, salt and pepper. This provides a new and fun twist on a traditional steak, and it doesn’t hurt that it’s crab season!

Take the steaks out of the fridge and pat dry with a paper towel.

Rub both sides of the steak with the garlic, onion, salt and pepper.

When the grill is ready, put the steaks on the outer rim of the grill to get the most direct heat to the steaks. Close the lid and wait 3-4 minutes before checking.

Cook the steak to desired internal temperature on the one side without flipping it (142° F). When it I gets to that temperature, flip for one second to seal in flavor.

Pull the steaks and let rest for 5-10 minutes, this is key. Serve. Enjoy!
