Skirt steak: combine the chili powder, salt, cumin, chipotle powder, cayenne and lime zest and in a small bowl. rub the spice mixture over entire skirt steak and let marinate in a zip-top bag at least 20 to 25 minutes.
When ready to cook, start the Traeger grill on Smoke with the lid open until the fire is established (4 to 5 minutes). Set the temperature to 400 degrees F and preheat, lid closed, for 10 to 15 minutes.
Place skirt steak on grill 3-4 minutes per side. Let rest for 20 minutes before cutting into bite sized pieces.
Next assemble the quesadillas; take the tortillas, and fill with cheese and skirt steak. Cook on a grill pan or in a sauté pan with extra oil to prevent burning. Serve with guacamole, sour cream or salsa. Enjoy!
