Carolina BBQ piled high on a burger. This smoky burger is topped with homemade chili and coleslaw for a meal you'll need to pull out the fork and knife for.

Ingredients

Burger:

  • 4 slices cheddar cheese
  • 4 sesame seed burger buns

Chili:

  • 1 lb lean ground beef
  • 2 tbsp chili powder
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 tsp oregano
  • 1 tsp brown sugar
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • cayenne or red pepper flakes, to taste
  • 1 cup beef stock
  • 1 (15 oz) can crushed tomatoes

Slaw:

  • 1/2 green cabbage, shredded
  • 1/2 purple cabbage, shredded
  • 2 carrots, schredded
  • 1/2 cup mayonaise
  • 1/2 cup sour cream
  • 2 tsp white vinegar
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tsp celery seed

Burger:

  • 4 slices cheddar cheese
  • 4 sesame seed burger buns

  • 1 lb lean ground beef
  • 2 tbsp chili powder
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 tsp oregano
  • 1 tsp brown sugar
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • cayenne or red pepper flakes, to taste
  • 1 cup beef stock
  • 1 (15 oz) can crushed tomatoes

Slaw:

  • 1/2 green cabbage, shredded
  • 1/2 purple cabbage, shredded
  • 2 carrots, schredded
  • 1/2 cup mayonaise
  • 1/2 cup sour cream
  • 2 tsp white vinegar
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tsp celery seed

Preparation

To make the chili, heat a cast iron pan over medium-high heat. Add ground beef and cook until browned and cooked through. Add remaining ingredients and bring to a boil. Reduce heat to medium low and simmer 20-30 minutes or until liquid reduces and thickens.

Divide the meat into four equal portions. Form into even patties.  

When ready to cook, start the Traeger grill on Smoke with the lid open until the fire is established (4 to 5 minutes). Set the temperature to High and preheat, lid closed, for 10 to 15 minutes.  

Arrange the burgers directly on the grill grate, depression-side down. Cook for 6 minutes, then flip and set grill to 180 degrees F (press Super Smoke button if using the Timberline).

Cook for an additional 7 minutes or until a thermometer inserted into the center of the burger registers 140 degrees F.

The last few minutes of cooking add cheese to burgers and place buns on grill to toast.

Combine mayo, sour cream, salt, pepper, vinegar, and celery seed in a medium bowl. Add the cabbages and carrots and toss to combine.

To assemble the burgers, top each patty with 1 slice of cheese, chili, and slaw. Enjoy!
