Combine all ingredients for pimento cheese and mix.
When ready to cook, start the Traeger grill on Smoke with the lid open until the fire is established (4 to 5 minutes). Set the temperature to High and preheat, lid closed, for 10 to 15 minutes.
Build burger patties and season both sides with salt and pepper.
Place patties on grill and cook for 5 minutes. Flip and cook for another 5 minutes.
Add 2 Tbsp of cheese mixture and continue to cook until cheese is melted and when a thermometer inserted into the thickest part of the burger reads 160 degrees F.
Toast buns directly on the grill grate for 1 minute.
Build burger and top with romaine lettuce and tomato if desired. Enjoy!
