When ready to cook, start the Traeger grill on Smoke with the lid open until the fire is established (4 to 5 minutes).
Set the temperature to 375 degrees F (High), and preheat, lid closed, for 10 to 15 minutes.
Dice green and orange peppers. Chop onion. Salt and pepper the onions and peppers and cook on a sheet pan at 375 degrees F in the Traeger until translucent. This should take about 14-20 minutes.
While peppers are cooking, drain the tomatoes and kidney beans and add them to a 10inch cast iron pot. Drain half of the juice out of the pinto beans and add to pot.
Add chili powder, kosher salt, ground pepper, onion powder and garlic powder. Mix together.
Cut the brisket into 1” cubes and add to the pot. Add cooked peppers and onions. Mix together. Add water as needed.
Turn the Traeger down to 250 degrees F and cook for 4 hours stirring every 30 minutes. Add water as needed during the cooking process.
After 4 hours, taste and add more salt and pepper as needed.
Mix the sour cream and chives. Cut a slit down the middle of the Fritos bag, add chili and top with sour cream. Enjoy!
