When ready to cook, start the Traeger grill on Smoke with the lid open until the fire is established (4 to 5 minutes).
To make the smoked lemon, rosemary and honey syrup: Thin 1 cup honey by adding 1/4 cup water in a shallow pan. Add zest of 2 lemons and 2 sprigs of rosemary.
Place the pan directly on the grill grate and smoke 45 minutes to an hour. Remove from heat, strain, and cool.
Increase the temperature to 350 degrees F and preheat, lid closed 10-15 minutes.
Toss lemon slices with granulated sugar and place directly on the grill grate. Cook 20-25 minutes or until grill marks form. Remove from grill and let cool.
In a mixing glass, add gin, lemon juice, lemon, rosemary and honey syrup and angostrura bitters.
Add ice to the mixing glass and shake. Strain contents into a classic coupe glass. Garnish with a grilled lemon slice. Enjoy!
