When ready to cook, start the Traeger grill on Smoke with the lid open until the fire is established (4 to 5 minutes).
To make the smoked lemon, rosemary and honey syrup: Thin 1 cup honey by adding 1/4 cup water in a shallow pan. Add zest of 2 lemons and 2 sprigs of rosemary.
Place the pan directly on the grill grate and smoke 45 minutes to an hour. Remove from heat, strain, and cool.
In a mixing glass, muddle the cucumber, lime juice and the lemon, rosemary and honey syrup.
After muddling, add ice, shake and double strain into a coupe glass.
Garnish with a sprig of rosemary. Enjoy!
