When ready to cook, start the Traeger on Smoke with the lid open until the fire is established (4 to 5 minutes). Set the temperature to 450F.
Put in deep dish dutch oven and preheat the grill, lid closed, for 10 to 15 minutes. Chop and add bacon to pre-heated dutch oven. Cook bacon until crispy brown then, drain grease.
Add bell pepper, onion and sausage to the cooked bacon. Cook until onions are translucent. In another bowl add garlic powder, onion powder, smoked paprika, cumin, black pepper, chili powder, Worcestershire sauce, yellow mustard, brown sugar, beer, pinto beans, apple juice and one dried chipotle pepper. Mix together and add to the dutch oven.
Leave on high (uncovered) and bring beans to a simmer. After it starts to simmer, reduce heat to 275 and cook for 2/12 to 3 hours or until sauce is thickened.
