Meaty Beer Beans

  • 1 pound bacon
  • 3 cups of pre-cooked sausage links
  • 2 16 ounce cans pinto beans
  • 2 red bell peppers
  • 1 bell pepper
  • 1 yellow onion
  • 1/12 teaspoons of garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • ½ teaspoon black pepper
  • 1 teaspoon chili powder
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon yellow mustard
  • ¼ cup brown sugar
  • 1 dried smoked chipotle pepper
  • 1 cup apple juice
  • 24 ounces of beer


Start the Traeger on Smoke with the lid open until the fire is established (4 to 5 minutes). Set the temperature to 450 degrees F and preheat. Put in deep dish dutch oven. To pre-heat, close lid for 10 to 15 minutes.

Chop and add bacon to pre-heated dutch oven. Cook bacon until crispy brown, then drain grease.

Then add bell pepper, onion and sausage to the cooked bacon. Cook until onions are translucent.

In another bowl add garlic powder, onion powder, smoked paprika, cumin, black pepper, chili powder, Worcestershire sauce, yellow mustard, brown sugar, beer, pinto beans, apple juice and one dried chipotle pepper. Mix together and add to the dutch oven.

Leave on high (uncovered) and bring beans to a simmer. After it starts to simmer, reduce heat to 275 degrees and cook for 2/12 to 3 hours or until sauce is thickened.
