It's Oktoberfest season, celebrate with a cold beer and some applewood schnitzel. These breaded cutlets are packed with perfect flavor, baked over apple hardwood and topped with grilled citrus.

Ingredients

  • 4 (4oz) boneless pork loin chops
  • 1/2 cup flour
  • kosher salt, to taste
  • Black pepper, to taste
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 2 eggs, whisked
  • 1 cup panko or unseasoned bread crumbs
  • 2 lemons, sliced in half
  • 4 (4oz) boneless pork loin chops
  • 1/2 cup flour
  • kosher salt, to taste
  • Black pepper, to taste
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 2 eggs, whisked
  • 1 cup panko or unseasoned bread crumbs
  • 2 lemons, sliced in half

Preparation

When ready to cook, start the Traeger grill on Smoke with the lid open until the fire is established (4 to 5 minutes). Set the temperature to High and preheat, lid closed, for 10 to 15 minutes.

Place pork chops individually between 2 pieces of plastic wrap. Pound with a meat mallet until they are around 1/4 to 1/8 inch thick. Season both sides generously with salt and black pepper.

Mix the garlic powder and paprika in a bowl. In another bowl whisk the eggs. In a third bowl add the bread crumbs.

Dip pork cutlets one by one into flour shaking off any excess, then into eggs and then into the bread crumbs. Place breaded pork cutlets onto a lightly oiled wire rack over a baking sheet.

Bake for 15 minutes then flip and bake for another 5 minutes. When you open the grill to flip pork, place sliced lemons directly on grill grate flesh side down.

Remove from grill and serve immediately with grilled lemons. Enjoy!
