When sweet maple syrup meets savory Dijon you get one heck of a pork tenderloin glaze. Brush it on before giving your pork a sear on the Traeger.

Ingredients

  • 3 tbsp Dijon Mustard
  • 1/2 tsp kosher salt
  • 1/2 tsp freshly ground black pepper
  • 1 lb pork tenderloin
  • 1/4 cup apple cider vinegar
  • 2 tbsp real maple syrup
  • 1 1/2 tsp chopped fresh sage
  • 3 tbsp Dijon Mustard
  • 1/2 tsp kosher salt
  • 1/2 tsp freshly ground black pepper
  • 1 lb pork tenderloin
  • 1/4 cup apple cider vinegar
  • 2 tbsp real maple syrup
  • 1 1/2 tsp chopped fresh sage

Preparation

When ready to cook, start the Traeger on smoke with lid open until fire is established (4-5 minutes). Set the temperature to High and preheat, lid closed, for 10 to 15 minutes.

In a small sauce pan, combine mustard, salt, pepper, apple cider vinegar and maple syrup. Simmer until glaze thickens (about 10 minutes) and set aside. Reserve half to serve with pork.

Take the pork tenderloin and brush with the reserved glaze.

Sear on high at front of grill grate rotating every few minutes until pork is browned on all sides. Brush again with glaze and move the pork into the center of grill.

Reduce heat to 350 degrees F and roast until a thermometer inserted in the thickest part of the meat reads 140 degrees F.

Remove from grill and allow to rest for 10 minutes. Slice and garnish with chopped sage. Serve with reserved glaze. Enjoy!
