Turn your Traeger on the Smoke setting for 5-10 minutes with the lid open. Then turn grill to 375 degrees F.
Rinse the chicken with cold water, transfer to a sheet pan.
Coarsely crush the dried spices and ginger and combine with half the butter. Spread butter spice mixture under the skin. Slice 1 orange and stuff into chicken along with the red onion, white onion, garlic cloves and thyme.
Rub outside of chicken with remaining butter, season with salt and pepper. Zest second orange over chicken and place chicken directly on the grill grate.
Roast at 375 for 1 to 1 ½ hours or until chicken reaches an internal temperature of 160 degrees F.
Let rest for 15 minutes before carving. Enjoy!
