When ready to cook, start the Traeger grill on Smoke with the lid open until the fire is established (4 to 5 minutes). Set the temperature to 375 degrees F and preheat, lid closed, for 10 to 15 minutes.
Rinse the chicken with cold water, transfer to a sheet pan.
Coarsely crush the dried spices and ginger and combine with half the butter. Spread butter spice mixture under the skin of the chicken.
Slice 1 orange and stuff into chicken along with the red onion, white onion, garlic cloves and thyme.
Rub outside of chicken with remaining butter and season with salt and pepper. Zest second orange over chicken and place chicken directly on the grill grate.
Roast at 375 degrees F for 1-1 ½ hours or until chicken reaches an internal temperature of 160 degrees F.
Let rest 15 minutes before carving. Enjoy!
