When ready to cook, start Traeger on Smoke with lid open until fire is established (4-5 minutes) increase temperature to High and preheat with lid closed for 10 to 15 minutes.
To make the Sriracha mayo, mix together mayonnaise and Sriracha in a small bowl and set aside.
Using your hands, mix together all the ingredients for the burgers in a large bowl until fully incorporated.
Scoop out about 1/3 lb of the mixture and form into a patty. Repeat with the remaining meat mixture until all used.
Grill the burgers until well browned, about 5 to 7 minutes per side and an instant read thermometer registers 165 degrees F when inserted.
Take a piece of the lettuce and place the burger in the middle. Spread the spicy mayo on top with sliced tomato and red onion.
Wrap it up in the lettuce like a burrito. Enjoy!
