An essential part of a traditional Southern feast, these collard greens are smoked before adding in Traegered bacon, ham, and all the fixings.

Ingredients

  • 12 slices smoked bacon, finely chopped
  • 2 medium sweet onions, finely chopped
  • 3/4 lbs smoked ham, chopped
  • 6 garlic cloves, finely chopped
  • 3 (32 oz) containers chicken broth
  • 3 (1 lb) fresh collard greens, washed trimmed
  • 1/3 cups apple cider vinegar
  • 1 Tbsp sugar
  • 1 tsp salt
  • 3/4 tsp pepper

Preparation

When ready to cook, start the Traeger grill on Smoke with the lid open until the fire is established (4 to 5 minutes). Keep the temperature on the Smoke setting.

Smoke the collard greens for 10 minutes.

Take collard greens off the grill and turn temperature up to 375 degrees F. Place Dutch oven on the grill to pre-heat (about 15 mins).

In the preheated Dutch oven, cook bacon until almost crisp. Add onions, and sauté 8 minutes.

Add ham and garlic, and sauté 1 minute. Stir in collard greens, broth and remaining ingredients.

Cook 2 1/2 hours or until desired tenderness.

Serve hot, enjoy!
