When ready to cook, start the Traeger on Smoke with the lid open until a fire is established (4-5 minutes). Turn temperature to 450 degrees F and preheat, lid closed, for 10 to 15 minutes.
Place whole Poblano chile and corn cobs directly on grill grate. Roast for 15 to 20 minutes, or until a nice char has been achieved. Remove from grill.
Shuck charred corn from cobs and set aside. Place Poblano chile in a bowl and cover with plastic wrap; wait 10 minutes, then easily remove skin. Dice chile and add to corn.
In a large mixing bowl, coarsely mash avocados, leaving some chunks. Add all remaining ingredients and mix.
Guacamole is best made as close to serving as possible. For short-term storage, seal in an airtight container with a piece of plastic wrap against the surface of the guacamole. Enjoy!
