When ready to cook, start the Traeger on Smoke with the lid open until a fire is established (4-5 minutes). Turn temperature to 450 degrees F and preheat, lid closed, for 10 to 15 minutes.
Salt and pepper all vegetables and grill them on both sides. Begin with the peppers and onions as they will take a little longer to cook.
Remove vegetables from the grill and stack the vegetables: sweet potato, zucchini, squash, red onion, and red pepper. Then repeat.
To hold vegetable stack together, take a fresh skewer of rosemary and push it down the middle. Enjoy!
