Toss this grilled vegetable medley on top of a juicy grilled steak or beside a leg of lamb to add a splash of color, they taste smoky sweet and are super colorful.

Ingredients

  • 2 potatoes Sweet Potatoes
  • 2 zucchinis Zucchini, cut into ¼” slices
  • 2 squash Squash, cut into ¼” slices
  • 1 onions Red Onion, cut into ½” slices
  • 2 peppers Red Bell Peppers, cut into ¼ squares
  • 8 Rosemary Skewers, cut in half
  • to taste Salt & Pepper
  • 2 potatoes Sweet Potatoes

  • 1 onions Red Onion, cut into ½” slices
  • 2 peppers Red Bell Peppers, cut into ¼ squares
  • 8 Rosemary Skewers, cut in half
  • to taste Salt & Pepper

Preparation

When ready to cook, start the Traeger on Smoke with the lid open until a fire is established (4-5 minutes). Turn temperature to 450 degrees F and preheat, lid closed, for 10 to 15 minutes.

Salt and pepper all vegetables and grill them on both sides. Begin with the peppers and onions as they will take a little longer to cook.

Remove vegetables from the grill and stack the vegetables: sweet potato, zucchini, squash, red onion, and red pepper. Then repeat.

To hold vegetable stack together, take a fresh skewer of rosemary and push it down the middle. Enjoy!
