When ready to cook, start the Traeger grill on Smoke with the lid open until the fire is established (4 to 5 minutes).
Toss potatoes with olive oil and season with salt and pepper. Place on a sheet pan and place the sheet pan directly on the grill grate and smoke for 15-20 minutes.
Remove from grill and adjust the temperature to High and preheat, lid closed, for 10 to 15 minutes.
Place the potatoes back on the grill and cook an additional 20-25 minutes or until tender. When they are cooked through, allow to cool.
While the potatoes are cooking, combine the mayonnaise and Sriracha. When potatoes are cool to the touch, toss potatoes with the Sriracha mayonnaise, parsley and chives. Enjoy!
