When ready to cook, start the Traeger on smoke with the lid open until the fire is established (4 to 5 minutes). Set the temperature on 180°F and preheat, lid closed for 10 to 15 minutes.
Cut the cauliflower into medium sized flowerets, place right on the grill grate and smoke for 1 hour. While the cauliflower is smoking, mix all of the ingredients together except for the Parmesan cheese. After 1 hour remove the cauliflower.
Turn the grill on high (450°). Preheat for 10 to 15 minutes. While the grill is coming up to temperature, brush the cauliflower with the ingredient mixture, and place it on a sheet tray.
Place back on the Traeger and roast it for 10 minutes or until it has a nice golden brown color. Finally sprinkle the Parmesan over each piece, close the lid until the cheese is melted. Enjoy!
