 Grilled Ratatouille Salad

Recently, we asked our Facebook fans what they would like to see making an appearance on the Team Traeger Blog. One of our special requests was for more healthy/vegetarian entrees. Always eager to please, we cooked up this recipe for a beautiful Ratatouille Salad. Let me tell you, if all vegetarian entrees taste like this we might consider giving up meat (except for bacon, we'd have to keep bacon). Delicious, bright, and beautiful this salad makes the perfect main course or even a fantastic side dish for your summer feasting.


Ratatouille Salad (from Traeger's Love Laugh Grill, Guilt Free Cookbook)


Prep Time: 15 minutes
Cook Time: 25 minutes
Serves: 4
Pellet Recommendations: Any

1 sweet potato
1 red onion
1 zucchini
1 summer squash
1 large tomato
Canola oil
Traeger's Veggie Shake or Salt and pepper

Start your Traeger on smoke with the lid open for 4-5 minutes to establish the fire. Preheat grill to high setting with the lid closed for 10-15 minutes.

Slice all vegetables to a ¼ inch thickness.

Lightly brush each vegetable with oil and season with Traeger's Veggie Shake or salt and pepper.

Place sweet potato, onion, zucchini, and squash on grill grate and grill for 20 minutes or until tender, turn halfway through.

Add tomato slices to the grill during the last 5 minutes of cooking time.

For presentation, alternate vegetables while layering them vertically. I like to sprinkle mine with a few panko bread crumbs before serving. Enjoy!
