There is nothing more fun than pushing the envelope of what is "normal" food to throw on the grill; so naturally, we had a blast with this recipe for grilled pound cake! The sweet cake caramelizes beautifully on the grill. Pair that with light whipped cream and bright berries and you have the perfect summer dessert. It's pretty too!
Grilled Pound Cake Trifle
Prep Time: 10-15 minutes
Cook Time: 10 minutes
Recommended Pellets: Apple, Pecan, Maple
2 pre-made pound cakes (pre-made seems to hold up on the grill better than homemade)
1/4 cup melted butter
3 cups whipped cream
1 cup blueberries
1 cup sliced strawberries
1 cup raspberries
Start your grill on smoke with the lid open for 4-5 minutes while the fire starts. Close the lid, turn the temperature setting to High and preheat for 10-15 minutes.
Slice poundcake loafs into 3/4 inch slices. We were able to get about 10 slices per loaf. Slicing is easier when loafs are partially frozen.
Brush each side of the poundcake slices with melted butter.
Place on the preheated grill and cook for 5-7 minutes per side, or until golden grill marks appear on the cake.
Remove the cake slices from the grill and allow them to cool completely.
Layer cake, berries, and whipped cream into a trifle bowl.
Top with a layer of whipped cream and decorate with berries. Serve chilled and enjoy!
