There is no better way to beat the summer heat than with a salty sweet drink that packs a chilly punch. Check out this recipe for a Smoked Salt Frozen Margarita. The slush is a breeze to whip up in the blender, and the smoked salt can be prepped in advance making cocktail time as easy as it is delicious. Smoked Salt Frozen Margaritas
Prep Time: 5 minutes
Cook Time: 24 hours to smoke the salts
Recommended Pellets: Mesquite for a stronger smoky flavor; Alder, Maple, or Apple for a more subtle smoky flavor
4 cups of ice
2 cups storebought margarita mix
6 oz Tequila
1/2 cup smoked salts (prepared as directed below)
1 lime, quartered (for moistening the glasses)
Grilled lemon or lime slices (for garnish)
A day before you need to make that margaritas, smoke your salts. Start with as much sea salt as you would like to smoke. Spread it out on a baking sheet (I used a cast iron griddle or "plancha") and smoke in your Traeger for 24 hours, stirring the salt every 8 hours.
Grill the lemons and limes (on High for 3-4 minutes on each side until they have nice grill marks.
Add ice, margarita mix and tequila and in a blender and puree until desired consistency adding more ice or margarita mix as necessary.
Before serving, rub a quarter of the lime along the top rim of a glass then immediately dip the rim into the smoked sea salt. The lime juice will help the salt adhere.
Pour your drinks and garnish with a slice of grilled lemon or lime. Enjoy!
