Simple Side Dishes: Red Curry Cauliflower

When you spend precious time perfecting your brisket, you need an arsenal of simple and delicious sides that you can throw together just minutes before meal time. Chop the cauliflower in advance, or buy it pre-cut so all you have to do is shake on the flavor and toss it on your Traeger. These little morsels are not only tasty, they are super fun to eat. The golden color they get from the Thai Red Curry spice earned them the "popcorn" title and because they just sounded fun, our Traeger kids couldn't get enough! Pop them in, as is, or serve them with a side of creamy ranch for dipping. Recipe inspiration from Mel's Kitchen Cafe

Red Curry Cauliflower "Popcorn"

 

Prep Time: 5 minutes
Cook Time: 10-15 minutes
Recommended Pellets: Any
Serves: 4

Ingredients:
1 head cauliflower, cut into bite-size pieces
2 Tbsp olive oil
1 Tbsp Thai Red Curry Spice
1 tsp coarse salt

Preparation:

When ready to cook, start the Traeger on smoke with the lid open for 4-5 minutes to establish the fire then close the lid and increase the heat to High. Allow the grill to preheat for 10-15 minutes.

Dump all ingredients into a gallon sized zip-top bag and shake until all the cauliflower is evenly coated.

Line a baking sheet with foil and lightly coat with non-stick spray. Pour the seasoned cauliflour on the baking sheet.

Cook for 10-15 minutes, stirring once. Cauliflower is done when the edges of the cauliflower start to brown and is tender-crisp.

Remove from the grill and serve immediately. Enjoy!

How hot is this spice? I would also suggest using a scale for hot or spicy meals.

I just wanted to let everyone know that the beer butt turkey was the best turkey I have had.  My family went nuts over it.  I used a 24 oz can of beer put it on a chicken beer butt double stand.  It worked great.  It was so juicy that the juice seeped out of the meat while eating it.  

Right now I am cold smoking some extra sharp cheddar and some salty and nutty cheddar.  It has been on for almost 4 hrs. so I guess it it time to take it off. I will let you know how it turned out
