30 Minute Meals: Grilled Chicken Thighs with Alabama White BBQ Sauce

If you saw our post on Facebook a couple of weeks ago, you got a quick rundown of this tasty recipe. Here is a more complete version, with a delicious White BBQ Sauce Recipe courtesy of Southern Living. White BBQ Sauce is a staple in North Alabama. Used for marinating, basting, drizzling on roasted meat, or even as a condiment on burgers and fries, this sauce is kind of a jack of all trades. We whipped up a double batch, some for our grilled chicken thighs and the rest for future Traeger'ing! Tangy and flavorful, we think this quick main dish will be a hit no matter where you are from. Side note: for a faster meal, use boneless skinless thighs; for a more traditional preparation, you can use bone-in, skin-on thighs just increase the cooking time to 34-45 minutes.

Grilled Chicken Thighs with Alabama White BBQ Sauce

Prep Time: 10 minutes
Cook Time: 15 minutes

Recommended Pellets: Oak or Pecan
Serves: 4-6 people

Ingredients:
2 lbs boneless, skinless chicken thighs
Your favorite Traeger Rub, we recommend the Chicken Rub, Pork & Poultry Shake, or the Sweet & Smoky Chipotle {we used this one}
For the White Sauce:
1 1/2 cups mayonnaise
1/4 cup water
1/4 cup white wine vinegar
1 tablespoon coarsely ground pepper
1 tablespoon Creole or whole grain mustard
1 teaspoon salt
1 teaspoon sugar
2 garlic cloves, minced
2 teaspoons prepared horseradish

Preparation:

Whisk together all ingredients until blended and set aside. Can be stored in the refrigerator up to 1 week.

Lightly dust the chicken thighs on both sides with your preferred rub.

When ready to cook, start the Traeger on Smoke with the lid open for 4-5 minutes to establish the fire. Close the lid and turn the temperature setting up to High. Allow the grill to preheat for 10-15 minutes.

Place the chicken thighs directly on the grill and cook for approximately 4-5 minutes on each side. Chicken is done when a internal thermometer reads 175 degrees Fahrenheit.
