Bacon Explosion with Peppers, Onions, and Hashbrowns

We never tire of bacon. We only tire of cooking bacon the same way over and over. So when we heard rumors of a dish called a "BACON EXPLOSION" you can imagine it caught our fancy. The basic idea goes like this: Make a bacon weave. Layer on some sausage. Fill it with flavorful goodies (like more bacon). Roll it up. Cook it. Ingenious, right?! We knew we could Traegerize this dish into something exceptional, and that is exactly what we did. After making our bacon weave, we filled our roll-up with hearty pork sausage, savory grilled peppers and onions, and savory golden hash browns. Serve it for breakfast, serve it for lunch, heck you could even serve it for dessert! No matter when you serve it, you will love it. That is a Team Traeger promise.

Bacon Explosion with Peppers, Onions, and Potatoes


Prep Time: 25-30 minutes
Cook Time: 1 hour on smoke, 1 additional hour cooking
Serves: 4-6
Recommended Pellets: Hickory, Oak, Maple


1 lb bacon
1 lb ground pork sausage
1 red bell pepper, diced
1 green bell pepper, diced
1 small red onion, diced
2 cups frozen hash browns
4 tablespoons butter
2 tablespoons vegetable oil
Salt and pepper
Your Favorite Traeger BBQ Rub
Traeger Regular BBQ Sauce (optional)


First, lay out your bacon weave in a 5x5 pattern. (There are detailed instructions on how to do a bacon weave here) Make sure you construct your bacon explosion on a piece of wax paper or tin foil. Sprinkle the bacon weave with a little of your BBQ rub. Chop up the remaining pieces of bacon and set aside.

Melt 2 tablespoons of the butter and olive oil together in a large hot skillet and dump in your sliced vegetables, hashbrowns, and your chopped bacon from the previous step. Season to taste with salt and pepper. Cook for 15-20 minutes, stirring occasionally, until the vegetables are softened, hashbrowns are golden brown, and the bacon is cooked through. Remove from the skillet and set aside.

Spread the ground sausage directly onto the bacon weave, using the back side of a spoon to evenly distribute. Your sausage layer should be about 1/2 inch thick.

Spoon the hashbrowns, onions, peppers and bacon mixture on top of your sausage.

Lifting up one side of the sausage, roll the sausage around the side and top of the vegetables and press the seams closed on each end.

Using the wax paper or foil, lift the bacon weave up and over the sausage roll. Overlap the bacon weave to create a seam along the bottom and on each end.

When ready to cook, start the Traeger on Smoke with the lid open for 4-5 minutes to establish a fire. Place the roll seam side down onto the grill grate and smoke for 1 hour.

Increase the temperature to 250 degrees and cook until the internal temperature reads 175 degrees Fahrenheit (takes approximately one additional hour.)

Slice into 1-inch thick wheels and serve with your condiment of choice. We love Traeger's Regular Barbecue sauce best!
