We love tailgating food that requires little effort and big flavor come game time so we can enjoy our food AND our company. Prep these tasty meatballs and the glaze in advance. Simply smoke and cook on your PTG or Junior (with the collapsible legs of course), toss the meatballs in the glaze and serve with toothpicks. Easy clean-up too! Don't worry about the spice, the jalapenos add just the right touch of flavor. If you like it spicy, include the pepper seeds in the mix.
Smoked Turkey Jalapeno Meatballs
Prep Time: 15 minutes, plus 1 hour sit time
Cook Time: 30 minutes smoking, plus 20 minutes grill time
Makes: 32 meatballs
Recommended Pellets: Hickory, Apple, Cherry
1 1/4 pounds ground turkey
1 jalapeno pepper, deseeded and finely diced
1/4 teaspoon Traeger Sweet and Spicy Chipotle Rub
1/2 teaspoon garlic salt
1 teaspoon onion powder
1 teaspoon salt
1/2 teaspoon ground black pepper
1/4 teaspoon Worcestershire sauce
1 pinch cayenne pepper
1 large egg, beaten
1/4 cup milk
1/2 cup plain bread crumbs
For the Glaze:
1 cup canned jellied cranberry sauce
1/2 cup orange marmalade
1/2 cup chicken broth
1 tablespoon minced jalapeno pepper
salt and ground black pepper to taste
In a large bowl, mix the turkey, Traeger Sweet and Spicy Chipotle Rub, garlic salt, onion powder, salt, pepper, Worcestershire sauce, and cayenne pepper together in a bowl. Stir in the egg, milk, and bread crumbs. Cover with plastic and refrigerate for up to 1 hour.
When ready to cook, start your Traeger on Smoke for 4-5 minutes with the lid open to establish the fire.
Roll the turkey mixture into balls, about one tablespoon each and place the meatballs in a single layer on a lightly greased baking sheet. Smoke the meatballs for 30 minutes.
While the meatballs are smoking, prepare the glaze. Combine cranberry sauce, marmalade, chicken broth, and jalapenos and cook over medium heat in a small saucepan.
Turn the temperature setting up to 350 degrees and close the lid. Cook meatballs until they start to brown, and flip occasionally until internal temperature reaches 175 degrees and all sides are browned.
Transfer the meatballs to a serving dish and pour the sauce on top of the meatballs. Serve immediately and enjoy!
