Easy Glazed Salmon Fillets

Why let restaurants have all of the fun? You can make your own restaurant-worthy salmon on your Traeger and it will taste twice as good with double the satisfaction and half of the cost. Oh, and did we mention that it's easy and you can whip it out in under 30 minutes? That's right. PREP TIME: 15 minutes
COOK TIME: 25 minutes

1 side of salmon or 4 center-cut salmon fillets with skin on, each 6 to 8-ounces
Traeger Salmon Shake, or salt and freshly ground black pepper
1/2 cup mayonnaise, preferably Hellmann’s
2 tablespoons Dijon-style mustard
1 tablespoon fresh lemon juice
1 tablespoon chopped fresh tarragon or dill, or 1 teaspoon dried
Lemon wedges and fresh chopped dill for garnish (optional)

If you want to save yourself a chunk of change and get twice the amount of salmon for your buck, cut your own fillets. Take the side of salmon and trim off the thin belly piece. This will help the fillets to be evenly cooked. (See below)

You can use the thin piece of trimmed salmon belly to make salmon cakes or as dog food (it's great for their coats) or just discard it.

Remove any pin bones in the salmon with kitchen tweezers or needle-nose pliers. Cut the salmon into fillets about 3 to 4 inches thick.

Season the fillets with the Traeger Salmon Shake.

Make the glaze: Combine the mayonnaise and mustard in a small bowl. Stir in the lemon juice and dill.

Spread the flesh-side of the fillets with the glaze.

When ready to cook, start the Traeger grill on Smoke with the lid open until the fire is established (4 to 5 minutes). Set the temperature to 350 degrees F and preheat, lid closed, for 10 to 15 minutes.

Arrange the salmon fillets on the grill grate, skin-side down.

Grill for 25 to 30 minutes, or until the salmon is opaque and flakes easily with a fork.

Transfer to a platter or plates, garnish with sliced lemons and chopped dill and serve immediately.
