The tempting smell of those nuts roasting in the mall always finds its way to your nose and leaves you dreaming about them for days. So let's put that torture to an end and just make your own. We threw in some spice and a bit of salt to balance all of that crunchy caramelized deliciousness. These nuts make excellent gifts and they're about 10 times better than those mall nuts. Start roasting these babies and the smell will attract your neighbors far and wide like Santa to cookies.
SWEET 'N SPICY SMOKED NUTS
PREP TIME: 10 minutes
COOK TIME: 30 to 40 minutes
RECOMMENDED PELLETS: Apple, Cherry or Hickory
MAKES: about 3 cups
1/3 cup brown sugar
2/3 cup white sugar
1 tablespoon of kosher salt
1 or 2 pinches of cayenne pepper, depending on how hot you like it
1 teaspoon of cinnamon
1 teaspoon of smoked paprika
1/4 teaspoon cardamom (optional)
1/2 teaspoon cracked black pepper
16 to 18 ounces of raw almonds
1 egg white, at room temperature
1 tablespoon of water
Start the Traeger on Smoke with the lid open until the fire is established, 4 to 5 minutes. Preheat to 300 degrees F with the lid closed for 10 to 15 minutes.
In a bowl, whisk together the sugars, salt, cayenne, smoked paprika, cinnamon, black pepper and cardamom. Make sure you get out all of those pesky lumps.
In a separate bowl, beat the egg white and water until frothy but not stiff.
Add the almonds into the egg whites and stir to coat evenly.
Sprinkle nuts with sugar mixture, and toss until evenly coated. Spread sugared nuts in a single layer on a cookie sheet fitted with buttered parchment paper or aluminum foil.
Place the cookie sheet on the grill grate and roast for 30 minutes, stirring halfway through.
Remove from the Traeger, and separate nuts as they cool. When completely cool, pour the nuts into a bowl, breaking up any that stick together.
