Traditionally, stuffed mushrooms are considered to be an Italian-American dish. But it is less known that mushrooms are masters of disguise. They taste delicious stuffed with everything from the classic cheese and sausage to the surprisingly delightful crab and lobster. If you can dream it, you can stuff it in a mushroom! That is why they are such perfect finger foods for any holiday get-together. And you can even make the filling days in advance and just Traeger them the day-of.
The Sicilian part of these Sicilian Stuffed Mushrooms comes from parmesan cheese, green olives, basil and sun-dried tomatoes. In other words, they are basically little flavor-packed, cheesy pizza mouthfuls.
SICILIAN STUFFED MUSHROOMS
PREP TIME: 15 min.
COOK TIME: 25 to 30 min.
MAKES: 12 mushrooms
12 medium fresh mushrooms, about 1-1/2 inches in diameter
4 ounces cream cheese, at room temperature
1/2 teaspoon dried basil
1/4 cup grated Parmesan or Romano cheese
1/4 cup shredded mozzarella
8 pimiento-stuffed green olives, chopped
3 tablespoons finely diced pepperoni
1-1/2 tablespoons minced sun-dried tomatoes, drained if packed in oil
1/4 teaspoon freshly ground black pepper
Dampen a paper towel and wipe the outside of the mushrooms clean.
Remove the stem. Using a small spoon (such as a metal measuring spoon), scoop out the inside of the mushroom leaving a shell.
MAKE THE FILLING: In a small mixing bowl, beat together the cream cheese, Parmesan, and mozzarella. Stir in the olives, pepperoni, tomatoes, basil, and pepper. (You can make the filling up to 3 days ahead. Cover and refrigerate until ready to use.)
Mound the filling in the mushroom caps. Set each filled cap into the well of a muffin tin.
When ready to cook, start the Traeger grill on Smoke with the lid open until the fire is established (4 to 5 minutes). Set the temperature to 350 degrees F and preheat, lid closed, for 10 to 15 minutes.
Arrange the muffin tin on the grill grate and bake the mushrooms for 25 to 30 minutes, or until the mushrooms are tender and the filling is beginning to brown.
Transfer to a serving plate or platter.
