With freezing temperatures running rampant throughout the country it's time to hunker down and watch some quality tv entertainment. And of course you can't kick back with your favorite sports unless you've got a delicious, preferably salty or better yet sticky snack in your hand. Especially a meaty one. Perhaps with a convenient bone for a handle. Our philosophy is "The messier, the better." These Chipotle Honey-Lime Wings hit the mark with an irresistible spicy, sweet and tangy glaze.
CHIPOTLE HONEY-LIME WINGS
PREP TIME: 5 minutes
COOK TIME: 30 minutes
RECOMMENDED PELLETS: Mesquite
2 lbs. chicken wings, separated into flats and drumettes, discarding the tips
Traeger Sweet Rub
Traeger Blackened Saskatchewan Rub
4 tbsp. unsalted butter
3 canned chipotles in adobo
1 tablespoon honey
2 tbsp. fresh lime juice
Avocado crema: 1 cup sour cream and 1 avocado mashed together with a squeeze of lime and salt and pepper to taste
Ranch or blue cheese dressing
Lime wedges for garnish or added pucker
Start the Traeger on Smoke with the lid open until the fire is established (4 to 5 minutes). Preheat to 350 degrees F with the lid closed for 10 to 15 minutes.
Spread the chicken flats and drumettes out on a baking sheet and season them lightly on both sides with a combination of the Traeger Blackened Saskatchewan Rub and the Sweet Rub.
Once the Traeger is preheated, place the chicken wings on the grill grate and cook for 30 minutes.
Meanwhile, put the butter and chipotles into a saucepan and melt the butter over low heat.
After the butter has melted, puree the mixture in a blender or using an immersion blender. Whisk in the honey and lime juice. (Add more honey or lime to taste)
After the wings are cooked-through, transfer them to a bowl and toss with the chipotle honey-lime glaze.
Make sure every bit of those wings are covered with that finger-lickin' sauce.
Serve the wings while they are warm with the avocado crema or some ranch or blue cheese dressing and an extra squeeze of lime if you like.
