Marty's 18 Hour Brisket
8 Pound Brisket
Olive Oil in Kitchen Sprayer
2 tablespoon(s) Brown Sugar
Rince Brisket and pat dry with paper towel.
Lightly spray all sides with Olive Oil.
Sprinkle both sides with Salt, Pepper, Garlic Powder, and Brown Sugar. Run spices into meat.
Lightly spray again with Olive Oil.
Place Foil Pan of Water on Grease Drain Pan. Start Traeger on Smoke. Once Traeger is started place Brisket on Grate.
Smoke 8 Hours. Turn temp up to 225. Check your Foil Pan of Water every couple of hours. Refill as needed.
When Brisket reaches internal temp of 190 turn off Traeger. Wrap Brisket in 2 layers of foil and return to Traeger 30-45 minutes to rest.
Slice against the grain.
