Marty's 18 Hour Brisket

  • 8 Pound Brisket
  • Olive Oil in Kitchen Sprayer
  • Salt
  • Pepper
  • Garlic Powder
  • 2 tablespoon(s) Brown Sugar

Preperation Steps
  • Rince Brisket and pat dry with paper towel.
  • Lightly spray all sides with Olive Oil.
  • Sprinkle both sides with Salt, Pepper, Garlic Powder, and Brown Sugar. Run spices into meat.
  • Lightly spray again with Olive Oil.
  • Place Foil Pan of Water on Grease Drain Pan. Start Traeger on Smoke. Once Traeger is started place Brisket on Grate.
  • Smoke 8 Hours. Turn temp up to 225. Check your Foil Pan of Water every couple of hours. Refill as needed.
  • When Brisket reaches internal temp of 190 turn off Traeger. Wrap Brisket in 2 layers of foil and return to Traeger 30-45 minutes to rest.
  • Slice against the grain.
