Stuffed Eye of Round Pepper Steak
4 Thick cut Eye of Round Steaks (1 1/2")
1/4 cup(s) Thinly sliced fresh spinach
1/8 cup(s) Finely chopped onion
1 tablespoon(s) Minced garlic
1/8 cup(s) Finely chopped tomato
4 tablespoon(s) Finely chopped mushrooms
2 teaspoon(s) olive oil
1/8 cup(s) blue cheese
1/2 tablespoon(s) Finely chopped fresh thyme
4 piece(s) bacon
Stuffing:In a skillet heat olive oil and saute spinach, onion,garlic,tomato,thyme and mushrooms. Salt and pepper to taste. Remove from heat and let cool,then stir in blue cheese.
Cut pockets in the middle of the steaks,taking care not to cut through. Stuff the steaks with the cooled stuffing and then wrap the bacon around to hold in the stuffing and use a toothpick to secure the bacon. Spritz with olive oil and season steaks with fresh ground course black pepper.
Cook on high until you reach perfered doneness, I suggest meduim rare. Let rest for 5-10 min.
