CHARLEY'S EXCELLENT SMOKED SALMON

Ingredients:
  • 4-6 Salmon Filets (Costco)
  • 1 Cheap Vodka
  • 3 cup(s) Brown sugar
  • 2/3 cup(s) Sea or Kosher Salt
  • 4 tablespoon(s) Smoked Paparik (heaping)

Preperation Steps
  • Soak Salmon filets flesh side down for approximately 1 hour. Then rinse & dry.
  • Make dry brine by mixing brown sugar, salt & paparika. apply thick layer to flesh side of salmon and seal (preferably VacuSeal) for 24 hours.
  • Rinse, pat dry & let air dry for an hour (I like it under a fan)
  • Smoke 160* - 200* for 2 hoursThen 275* until done (20- 40 minutes)
  • Remove skin & enjoy. Freeze individually with skin on
