Ingredients:
4-6 Salmon Filets (Costco)
1 Cheap Vodka
3 cup(s) Brown sugar
2/3 cup(s) Sea or Kosher Salt
4 tablespoon(s) Smoked Paparik (heaping)
Preperation Steps
Soak Salmon filets flesh side down for approximately 1 hour. Then rinse & dry.
Make dry brine by mixing brown sugar, salt & paparika. apply thick layer to flesh side of salmon and seal (preferably VacuSeal) for 24 hours.
Rinse, pat dry & let air dry for an hour (I like it under a fan)
Smoke 160* - 200* for 2 hoursThen 275* until done (20- 40 minutes)
Remove skin & enjoy. Freeze individually with skin on
