Ingredients:
20 JalapeƱos, 3" length
1 16 oz package Cream Cheese at room temp
4 ounce(s) Crushed pineapple, drained
1/2 Minced Onion, medium
2 tablespoon(s) Texas BBQ Rub or your favorite
1 pound(s) Package of Bacon cut in half crosswise
1 1 package of Lil' Smokie cocktail franks
Preperation Steps
Preheat your Traeger Grill to 275°, clean the grates.
Cut the caps off the Jalapeños, split lenght wise, remove the seeds and the ribs. Rinse under cool water and drain.
Mix the room temp cream cheese, drained crushed pineapple, finely minced onion and the rub together in a bowl.
For transporting the ABT's to the Traeger I like using a Frogmat. This is a 1/4" grid cooking screen made of heat resistant silicone over nylon. Place the Frogmat on a 1/2 size sheet pan.
Assembly: Fill each 1/2 of the Jalapeno with the cream cheese mixture about even with the top. Place a Lil' Smokie on the cream cheese and wrap with 1/2 slice of bacon. Insert a toothpick thru the top to hold the ABT together. Place on the Frogmat or sheet pan.
Place the Frogmat or each of the ABT's on the grill grates keeping then a minimum of 2" from the front and back of the grill.
Cooking time is about 1 hour and 30 minutes. Rotate half way thru the cook. Adjust time if cooking with other foods or at a different temperture. The ABT's are done when the bacon is near the crisp stage.
Comment: The Jalapenos will not have much heat after cooking. Most of the heat is in the seeds and ribs that were removed.
