The Musty Crusty Brisket

  • 3 to 4 lb Flat Cut Beef Brisket
  • 1-1/2 cup(s) Beef Broth (Your Choice of Brand)
  • 1/4 cup(s) Sea Salt
  • 1/4 can(s) Fresh Ground Black Pepper
  • 1/4 cup(s) Garlic Powder
  • 1 can(s) Cheap YELLOW Mustard

Preperation Steps
  • Choose your desired size of FLAT beef brisket. The flat is easier to smaoke and levels cooking time. Place bribsket in flat baking pan or elongated baking dish. Using injector, randomly inject all beef broth into flat brisket. Only inject broth on one side of brisket. Cover pan with plastic wrap and place in refrigerator for 2 to 3hrs.
  • Remove from Frigde and allow to sit at room temperature for 1 hour. Lighty pat excess both off brisket. Mix salt, pepper and garlic powder together. Coat TOP, Sides and Bottom of brisket heavily with mixture Make sure to press seasoning onto brisket. Take yellow mustard and cover entire brisket with meadium coat of mustard. Carefull not to put it on toooooo heavy ;)
  • Open smoker lid. Set smoker to "Smoke" position. Allow to smoke for 5min or until a good cloud of smoke is consistent in the unit. Place brisket FAT SIDE DOWN!!! Yes I said Fat Side Down in middle of smoker and close lid. Go get your favorite beverage...Now this next 10 hours is like watcing paint dry.
  • Leave brisket on smoker for 9 to 12 hours until internal temperature of brisket is 197 degrees. Try not to open the smoker. It slows down the cooking time. Once the middle of the brisket has a temperature of 197 take brisket off smoker wrap in aluminum foil and place in a cooler for 3/4 hour. Make sure to close lid and seal tightly. You can even put newspaper around the foil to keep the heat in. The yelow mustard should now look DARK/Burnt!!! What a crust this will make. Don't scrape it off!! Once you have put the brisket in the cooler...DO NOT Peek!! It lets the heat out.
  • After 3/4 hour, remove brisket from foil. The juice in the foil is GREAT to add to baked beans or use to pour over brisket. Place on cutting board and slie into 1/4 inch pieces cutting at a angle against the grain.
  • Enjoy the best brisket of your life. Great side items include cheese potatoes and baked beans.
