Delicious Pork Loin
5-8 lbs Pork Loin
After Removing the loin from the package rinse off in the sink and dry off with paper towels. When finished with that lay out some wax paper or metal tray so you have a surface to put your rub of the loin.
Score the the fat side of the loin in a checkered pattern so that the rub will penetrate to the meat.
The ingredients you will need for you rub are as followed. salt pepper onion powder garlic salt Traeger sweet rub Traeger pork and poultry shake cinnamon Coat both side of the loin with all of these ingredients. Be careful not to over use the cinnamon. You don't want that you over power the other spices.
When you are finished with your rub it is time you inject the loin with apple juice. Make sure you have the loin in a tray or a pan so you don't make a mess of you counter with the apple juice. Inject in as many place as you can.
Wrap the loin in seran wrap and place on a tray or pan so you don't make a mess in your frig. Place in frig for 1-3 days.
Using Apple Or Hickory Pellets Start up you traeger grill on smoke with the lid open for about 4-5 mins. When grill get going turn up to 350 Degrees or High. Close the lid and let preheat for about 15 mins. Turn down you smoke and put the loin on the grill. Make sure you have the fat side facing up. Do not flip the meat after you put it on the grill.
Let smoke for 3 hours. After three hours turn to 250 degrees or medium for 1-1/2 hour. Then turn up to 350 degrees or high for 1 hour. Make sure meat is at 165-170 degrees before you take off the grill. When you remove the loin from the grill place on the tray and drape some alum foil over top of the meat and let rest for 20 mins.
Slice up meat and serve either on a bun or by itself with you favorite barbeque sauce. i suggest using the Apricot BBQ Sauce. Pour a bottle of Apricot Sauce in a glass measureing cup and add a 1/4 cup of maple syrup. Warm up in the micorwave and stir together. Let it sit and cool. After the meat is ready to serve all you have to do is enjoy.
