Ingredients:
1 Rack Baby Back Ribs
1 Rack of Baby Back Ribs
4 sausage or brats, or your favorite
3/4 pound(s) Sauerkraut
1 Slice onion
1 Salt & Pepper
1 cup(s) water, chicken broth, beer, or white wine
1 Batch Knopfles, Drop Noodles
2 eggs
2 tablespoon(s) Water
1 cup(s) Flour
1 Pinch of salt
Preperation Steps
I did this on my Traeger 07E. Season ribs with salt & pepper & I always use some Adolf’s meat tenderizer, noMSG, on most of my meats. Start smoker & set for smoke 170 deg. Place ribs on grill for 2 to 2 ½ hrs. your preference. Half way through flip ribs & add sausages. Flip sausages half way through.
Spray foil pan with cooking spray add sliced onions to cover bottom, add ribs & sausage, cover with sauerkraut. I used about ¾ of the lb. jar. Add about 1 cup liquid. Turn smoker to 300 deg, place foil pan covered with foil on grill. Cook 1 hr. 15 min with cover on.
I then removed the cover, at this time add liquid if needed, add drop noodles, go to 325 deg for another 45 min. uncovered. Note: If you use fresh sausage, smoke for the 2 to 2 ½ hrs.
Make your drop noodles while Pork & Kraut are cooking. Bring a pan of salted water to a rapid boil; I add about a TBS of oil, this helps to keep it from boiling over. Using a kitchen knife cut ribbons from the mixing bowl into the boiling water. Try to keep them smaller than a pencil or they get too big. Let cook about 3 min after you get all the noodles cut into the water. Stir some & you can tell when they are done. Drain & use for favorite dish.
