6 lb pork shoulder
1/2 tablespoon(s) brown sugar
1 tablespoon(s) sugar
2-1/4 teaspoon(s) garlic salt
2-1/4 teaspoon(s) salt
1/2 tablespoon(s) paprika
1 teaspoon(s) chili powder
1/8 teaspoon(s) crushed oregano
1/8 teaspoon(s) cayenne pepper
1/8 teaspoon(s) ground cumin
1/8 teaspoon(s) black pepper
In a small bowl combine the dry rub ingredients above. Mix, then set aside.
Rinse pork in cold water and pat dry.
Apply the dry rub to the pork and coat evenly. We start the night before and after the pork rub has been applied, we wrap it up in saran wrap and refridgerate overnight to seal in the flavor!
After starting the Traeger , set the temperature at 225 degrees and place the pork fat/skin side down and cook for approximately 12-13 hours or until the internal temperature reaches 195 degrees.
While the pork is cooking--every hour, spray or baste the pork with this mixture. We put it right in a squirt bottle and spray it down! 3/4 cup of apple juice 1/2 cup of water 1/4 cup of sugar 1-2 tablespoons of salt 2 tablespoons of worcestershire sauce
Once the temperature reached 195 degrees internally, remove the pork. Let rest 20-30 minutes and then pull. Enjoy!
